Homemade Granola with Peach Apple Compote

Breakfast, Lunch, Snack or Dessert deliciousness with a touch of healthiness and frugalness = Awesome! Thank God for Blogs and Podcasts. Serving

 

 

 

 

 

 

 

 

 

 

 

 

Granola (my quick and dirty recipe)DSCF2292

2 cups rolled or steel cut oats

1 cup Grape Nuts

1/2 cup Applesauce

1/4 cup Butta

1 tsp Vanilla

1/4 cup Molasses

1/4 cup Honey

1 tsp each Cloves/Cinnamon/Ginger (or whatever you like)

1/2 tsp Nutmeg

Nuts Optional – however much you want as long as its not = to the amount of oats and cereal. :-D

Mix Oats and Cereal

Melt Butter and Applesauce and pour on top of Oats and Cereal and mix

Pour Molasses and Honey onto Oats and Cereal and mix

Put in spices and mixDSCF2295

Spread on cookie sheet and bake for half an hour or

until it’s your version of done.

 

 

 

Peach/Apple Compote (or whatever kind of fruit you like) DSCF2296

1/2 cup water

1/2 cup White or Brown Sugar

2-3 cups Fruit (whatever you like cut in as big or small pieces as you like. I like Peaches and Apples cut medium smallish)

Zest one Lemon

Zest 1/2 Orange

1 tsp Fresh Ginger

Cook until fruit is almost soft, but not quite, you know with a little bite and with a nice delicious syrup coating every piece.

AND then squeeze half a lemon to brighten up at the end. If you like it.

Dump some Vanilla or Plain yogurt in a glass and Parfait it up baby!

You can eat this warm and it totally rocks or you can cool it down to room temp and that works too.
