Black Tie Event




So since we just bought a house and of course when moving you eat the worst food imaginable because it is quick and the kitchen is still in boxes on the living floor. Sometimes you say "Enough, I must have home cooked delicacies this night". And sometimes all you can find is a bag of beans or two. So what does any cook worth their salt do, well make Black & White Bean Soup with Smoked Turkey and Herded Bread of course!

3 Smoked Turkey Legs

1 Bag of Black Beans

1 Bag of White Beans

1Pack of Bacon (cut into lardons)

4 Celery Stalks

3 Large Carrots

1 Medium Onion

1 24oz Box Chicken Stock or Broth

Prep

Cover beans in room temp water overnight

Day of prep

Simmer turkey legs in 8-10 cups of water for 2-3 hours or until reduced by a third. Drain the broth in a large bowl and set aside. Remove meat from legs an skin and set aside. Discard bones, fat and skin.

In a large pot saute bacon lardoons until crispy, add chopped celery, onion and carrots (chopped to the size you prefer) and continue saute until veggies are almost translucent.

Add drained beans(as much as you like), turkey and all broth + 2 cups water and stir. Simmer for 2-3 hours until its thickened. 15 min before serving add 1 tsp Cumin. Salt and pepper too taste.

Eat alone or serve over white/brown rice with crusty bread or corn muffin.
